Ingredients
1cupsugar
1cupbutter,softened
1egg
1teaspoonvanilla
2 ½cupsall-purpose flour
1teaspoonbaking powder
¼teaspoonsalt(omit if butter is salted)
8oz.cream cheese,softened
½cuppowdered sugar
1cupCool Whip or homemade whipped dessert topping

Instructions
Preheat oven to 350 degrees Fahrenheit. Add butter and sugar to a large bowl or stand mixer and beat together with an electric mixer until creamy and well combined.
Add in the egg and vanilla and mix well using your stand mixer or hand mixer.
Add in the flour, baking powder, and salt, and mix until the cookie dough is smooth with no remaining lumps.
Roll out the dough on a parchment paper-lined pizza pan or cookie sheet. If you are finding that the dough crumbles or sticks to your rolling pin, wrap the dough in plastic wrap and chill for 20 minutes before rolling it out.
Bake the crust at 350 degrees Fahrenheit for 12-15 minutes or until set in the middle. Golden brown is overcooked, so don't let it cook that long. Overcooking the crust will make it dry and crumbly.
Remove the pan from the oven and let the crust cool completely.
To make the cream cheese frosting, add the softened cream cheese, powdered sugar, and Cool Whip to a medium bowl or stand mixer. Mix until well combined and light and fluffy.
Spread the frosting in an even layer across the cooled cookie crust.
Top the frosting with the colorful fruit of your choice.
To serve, slice with a pizza cutter (my favorite) or a sharp knife and enjoy!

Store leftovers in an airtight container or wrapped in plastic wrap in the fridge for up to 3-4 days.
