Maybe you searched for vegan cookie recipes and landed here. I’d like to preface this recipe with a disclaimer: I am not a vegan. Nor am I gluten-free. I’m not even opposed to a little refined sugar here and there. So, how did I come across the most amazing vegan, gluten-free, grain-free, dairy-free, egg-free, refined sugar-free chocolate chip cookie recipe in the world?
Long story short, there was a time several years ago when I had to give up dairy and gluten in hopes of helping my allergic breastfed baby. It was a tough time in life, but coming up with this recipe was one of the perks!
Back then, gluten-free recipes were hard to find. The only one I could find still had dairy and eggs. A few tweaks and trial runs later, we had a recipe that even my dairy and gluten-loving children raved about. In fact, to this day, we often make this version instead of the original because these are stinking delicious cookies!
This is also my go-to recipe when I’m bringing a dessert to friends or family with food sensitivities or to a large gathering where I know there will be people who can’t (or choose not to) consume dairy or gluten ingredients. As if that wasn’t good enough, these cookies are also free of refined sugar, which makes them guilt-free too!

- Choose your coconut oil based on the flavor you prefer. We love the added coconut undertones that unrefined coconut oil offers. If you don’t like the taste of coconut (it’s pretty subtle), use refined coconut oil.

- Measure precisely: Gluten-free baking is sensitive to ingredient ratios, so measure your ingredients accurately to achieve the best texture and consistency.
- Don’t overmix: Mix the cookie dough until just combined to prevent it from becoming too dense or tough, as gf flours can behave differently from wheat flour.
- Chill the cookie dough: Letting the dough chill in the refrigerator for at least 30 minutes can help the cookies hold their shape better while improving their texture.
- Keep an eye on the baking time: Gluten-free cookies can burn easily, so remove them from the oven once the edges start to brown. They will look undercooked when you remove them from the oven. Don’t worry, they will firm up as they cool.

How to Make Gluten-Free, Dairy-free Chocolate Chip Cookies
Step 1: To a large bowl, add:
- 5 cups fine almond flour
- 1 tsp. salt
- 1 tsp. baking powder
Step 2. Whisk to Mix Well
Mix the dry ingredients thoroughly.
Step 3. In a separate bowl, combine the wet ingredients:
- 1/2 cup softened/melted coconut oil
- 1/2 cup melted honey
- 4 tsp. vanilla extract
Step 4: Stir to combine the wet ingredients
Step 5: Add the wet ingredients to the dry ingredients and mix well.
Step 6: Chill for 30 minutes while you preheat oven to 350 F.
Step 7: Drop spoonfuls of batter on a cookie sheet. I like to use parchment paper or a silicone liner. You can use a cookie scoop.
Step 8: Bake for 8–10 minutes or until golden brown.
Step 9: Let the cookies cool for 5 minutes, then transfer them to a wire rack.
How to Store
Short-term storage
Place the cooled cookies at room temperature in an airtight container. This will help keep them fresh for about 3-5 days.
Freezing
First, let the cookies cool completely. Then, place them in a single layer on a baking sheet and freeze until they’re nice and solid. Once frozen, transfer them to a freezer bag or container.
If stacking cookies in the container, place parchment paper or wax paper between layers so they won’t stick together. Finally, label and date airtight container or bag so you can keep track of how long they’ve been stored. Cookies can be frozen for up to 2-3 months!
Thawing
When ready to eat, remove the desired number of cookies from the freezer. Let them thaw at room temperature for about 15-30 minutes. And for that freshly baked taste, warm the thawed cookies in a preheated oven at 300°F (150°C) for a few minutes until heated through.
Freezing the dough
You can also freeze the raw cookie dough before baking. To do this, shape the dough into cookie dough balls , freeze on a baking sheet, then transfer frozen dough balls to a freezer bag. Bake from frozen, adding an extra minute or two if needed.
