We just returned from a vacation in Florida, where one of my guilty pleasures was virgin piña coladas on a warm beach. Determined to recreate this tropical beach indulgence at home without the high cost, I whipped up a version that’s even better than the poolside one, making a full blender for the entire family for just a few dollars!

While traditional alcoholic pina coladas are made with white rum, this refreshing drink is typically a blend of pineapple juice and coconut milk or cream. A non-alcoholic pina colada is a delicious drink perfect for a hot summer day when you want to enjoy the amazing flavors of a piña colada without the alcohol.  A traditional Piña Colada is the national drink of Puerto Rico!

  • 2.5 cups of unsweetened pineapple juice to provide the signature tropical flavor and refreshing taste

  • A good blender: you need a high-speed blender (I love my Ninja!) to blend the ingredients until you achieve the level of smoothness you desire.

How to Make Virgin Piña Colada

Step-by-step instructions:

  1. Add juice, coconut milk, and 1/2 of the can of sweetened condensed coconut milk, to a regular size (72 oz capacity, or similar) blender. 
  2. Add ice until it reaches the “max fill” line. If your blender is a different size, you may need to adjust the quantities.
  3. Blend on “high” until smooth.
  4. Add more sweetened condensed coconut milk until you achieve the sweetness and flavor you prefer.
  5. Optionally, add coconut cold foam or coconut whipped cream
  6. Serve garnished with pineapple slices and an optional cocktail umbrella

Pro Tip

I like my piña colada’s sweet, but you can adjust the sweetness by doing less of the sweetened condensed coconut milk. The first time you make this recipe only add half of the can and taste test as you go, as everyone’s preference for added sugar is different.

How to Store

Store any leftovers in an airtight container or pitcher, and refrigerate. You can safely store this drink in the fridge for up to 2–3 days. Before serving again, give the mixture a good stir or shake to recombine any separated ingredients. Avoid freezing, as this can negatively affect its texture and flavor.
