Ingredients

  • half the number of acorn squash as you’d like servings, cut in half and seeded
  • Olive or avocado oil
  • 2 tablespoons butter per squash
  • 2 tablespoons brown or maple sugar per squash
  • salt
  • maple syrup
  • 1 cup orange juice (or water, but orange juice gives it a great flavor!)

Directions:

  1. Preheat oven to 400°F.
  2. Rub the inside of the cut and seeded squashes with oil and sprinkle with salt.
  3. Pour 1 cup of orange juice (or water) into a baking pan. The juice should just cover the bottom of the pan. Place the squash, cut side down, into the baking pan.
  4. Bake for 30-40 minutes or until fork tender.
  5. Remove the tender squash from the oven and flip them over so that their cut sides are facing up in the baking pan. Rub 1 tablespoon of brown sugar over the flesh, then drizzle with maple syrup.
  6. Continue to cook for 5 – 10 minutes or until brown and bubbling.
